In Rewalsar, a small town in Himachal Pradesh, everyday culinary preparation carries the weight of centuries-old heritage. Here, women prepare traditional bari (or wadi) – a staple created to preserve vital nutrients for the long winter ahead.

Fresh taro stems (colocasia) are wrapped in a spiced, ground lentil paste, left to dry slightly in the sun, and then skillfully sliced into small rounds using a traditional curved blade known as a dharat. Looking down at the process, the visual harmony is captivating: the intricate henna patterns (mehendi) on the artisan’s hands mirror the repetitive, rhythmic textures of the sliced green stems and vibrant fabric.
